CORN SOUP WHIT AMARANTH
Serves 4 people

Ingredients:

*1/4 cup oil.
* Two cups of amaranth leaf.
* 300 grams of chopped zucchini.
* 2 Shelled Corn.
* 2 liters of water
* 1/2 Kilo of red tomatoes or 2 cups tomato puree
* 1 sprig epazote.
* 2 cloves of garlic.
* 1/2 onion slice.
* 1/2 cup amaranth cereal

Preparation:

1. In a bowl cakentar the oil and fry the squash, amaranth leaves and corn kernels.
2. Add the tomato paste and tomatoes with garlic and onion previously liquefied with water and epazote.
3. Cook the vegetables for 30 min.
4. Decorate with manchego cheese or buttermilk and sprinkle some amaranth cereal.


DRINK OF SOJA, OATS AND AMARANTH

This is a drink for breakfast in the morning, is recommended for kids, you can make a night before eating.


Ingredients:
*2 liters of soy milk
* 150 grams of amaranth flour
* 50 grams of grain amaranth
* 150 grams of rolled oats
* Cinnamon and sugar

Preparation:

1. Boil the milk with the cinnamon.
2. Grind in blender the oats, amaranth flour and cereal, with little cold water.
3. When boiling milk is emptied flour, let simmer, stirring to prevent sticking.
4. Sweeten to taste.

GREEN RICE WHIT AMARANTH

Ingredients:
 
*1/4 of washed and drained rice
* 1/2 onion slice
* 2 cloves garlic, minced
* Two cups of amaranth leaves.
* 4 poblano chiles, roasted and deveined (optional)
* 3 cups chicken broth or vegetable (or water)
* Salt
* Oil, the necessary

Preparation:
1. In a skillet heat the oil and fry the rice with the onion and garlic.
2. Blend chiles with amaranth leaves in a little water. When the rice is transparent, drain the oil, add the vegetable broth and mix of chilies and leaf.
3. Let the fire until the rice fluffy and ready.
